breakfast: 2 pieces toast w pb, tea
lunch: blt sandwich (lite on the bacon) on whole wheat, small bowl of soup (tomatoey, hamburger type soup), water
snack: banana w a bit of ice cream
supper: one serving (well, fairly generous) of Shepherd's Pie, tossed salad w 1000 islands water
snack: 6 pretzels, 1/2 can of Pepsi
exercise: a LOT of hoeing in the garden and a walk that was probably close to one mile
Karen here is my Shepherd's Pie recipe (I hope I am not breaking any rules by posting it here)
1 lb. ground beef 2 carrots, diced
1 onion 4 large potatoes
1 clove garlic 1 Tbsp butter
1 tsp salt 1 egg, beaten
1/2 tsp pepper 1/2 cup milk
1/4 tsp Thyme 1/2 cup grated cheddar cheese
3 Tbsp flour 2 Tbsp Parmesan
10 oz can beef broth 2 Tbsp buttered bread crumbs (cracker crumbs work great!)
1 tsp Worcestershire sauce
Cook ground beef, onion and garlic until lightly browned. Add salt, thyme, pepper, and flour. Gradually stir in beef broth. Stir in Worchestershire sauce and carrots. Cover and simmer over low heat for 20 minutes. Spoon into casserole dish. Peel and cook potatoes until tender. Mash with butter. Blend 1/2 beaten egg with milk and cheddar. Beat into mashed potatoes. Spread on top of meat. Brushed with leftover egg and sprinkle with Parmesan and crumbs. Bake at 400 for 15 minutes or until golden. Makes 6 servings.
